Gingerbread Loaf

I love gingerbread and this loaf is really moist and flavorful. It's got a wonderful tangy taste, mainly from the molasses but the spices also contribute to the full-bodied flavor.

2 1/2 cups all-purpose flour

2 tsp. ginger

2 tsp. cinnamon

1/2 tsp. cloves

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

2 large eggs

3/4 cup fancy molasses

3/4 cup sour milk (add 1 tsp. vinegar to the milk)

1/2 cup packed brown sugar

1/4 cup cooking oil

Method: Preheat oven to 350ยบ F. Grease a bread pan and set aside. In a large bowl combine dry ingredients. Mix thoroughly. Make a well in the center. In a separate bowl beat eggs well. Add remaining ingredients and beat thoroughly. Pour into well in center of dry mixture and stir just to moisten. Spoon batter bread pan. Bake for about 50 to 60 minutes or until a toothpick inserted in the center of the loaf comes out clean.

Makes 16 servings.
